Xinomavro is an old Greek multidynamic red grape variety giving different types of wines in different climates (from tannic,good acidity,high brix,flavourable red , to fruity rose and sparkling wine) nice for barrel aging,with excellent adaptation to long aging.This variety is vigorous and sensitive to drought.

Xinomavro [ Ksee no' ma vro ]

The predominant grape variety in Macedonia is a native red called Xinomavro, (meaning "acid-black"). The wines made from Xinomavro are known for their superb aging potential and their rich tannic character. Their complex aromas combine such red fruits as gooseberry with hints of olives, spices and dried tomatoes.

The way of vinification: After the destemming and crushing of grapes and when we have achieved the desired colour extraction, we separate the juice from the grape solids and we are bringing the must for fermentation in a temperature control environment in steel tanks for fermentation.

This rose wine has a brilliant rose colour.The aroma is an impressive strawberry flavor springled with sugar,candies and sweet cherry rose.It has a dry mouth, particularly aromatic, full bodied with nice acidity and spicy sweet flavors in the aftertaste.

Combination:grilled meat ,pasta,mild cheese .ideal for dishes of asian food
